Hidden sources of iron and high-protein blend with fresh fruit, coconut and vanilla to create this substantial smoothie bowl.
½ cup (60g) blackberries
¼ cup baby spinach
¼ cup (70g) silken tofu
⅔ cup (100g) low-fat cottage cheese
2 tsp (2½ g) vanilla beans or 1 tsp vanilla extract
3 tsp (10g) chia seeds
1½ tbsp (7g) coconut
- Place the banana, blackberries (set some aside to garnish the smoothie bowl), cottage cheese, silken tofu, vanilla, spinach and ice into a blender and blend until smooth and creamy.
- Spoon the smoothie mixture into a bowl. Top with the remaining blackberries, chia seeds and shredded coconut. Serve and enjoy.
