Blistered Cherry Tomatoes and Hummus Sourdough

A tasty savoury breakfast to keep you going through the morning.



2 slices wholemeal sourdough bread
½ cup mixed cherry tomatoes
¼ cup basil
½ tbsp olive oil
2 cups spinach
1 tbsp hummus



  1. Heat olive oil in frypan over medium heat.
  2. Add whole cherry tomatoes and cook for 5 minutes, or until skin is blistered.
  3. Add spinach to tomatoes, and cook until wiltered.
  4. Meanwhile, toast sourdough to preference.
  5. Spread hummus on toasted sourdough and layer with spinach and tomato mixture.
  6. Sprinkle over basil leaves and season with salt and pepper to finish.
