Buckwheat Pancakes With Berries

These buckwheat pancakes with berries are wholesome and delicious! Read for the perfect weekend breakfast to satisfy your sweet tooth.
 

Ingredients

⅓ cup (40g) buckwheat flour
1 small egg
½ tsp baking powder
200ml milk
½ tbsp olive oil
2 tbsp ricotta cheese
2 tsp honey
½ cup (100g) blueberries or other berries

 

Method

  1. In a medium bowl whisk egg and milk together. Add flour and baking powder and mix until combined.
  2. Heat the oil in a small pan, add 1/4 of pancakes batter and cook on each sides for 1-2 minutes. Repeat with remaining batter.
  3. Serve pancakes with ricotta, berries and honey. Enjoy!
