- ¼ cup baby spinach
- ½ cup mushrooms
- 2 ¾ tbsp feta
- 2 tsp chia seeds
- 1 lemon, juiced
- 2 soy & linseed corn cakes
- ¾ cup frozen peas
- Place spinach, peas, mushrooms, feta cheese, chia seeds, lemon juice and salt and pepper in a food processor. Mix until well combined.
- Serve dip with thin corn cakes. Enjoy.
