Vegetable lasagne

Veggie Lasagne

Sweet potato, asparagus, zucchini and spinach. This vegetable lasagne is a great healthy alternative to everyone’s favourite comfort food.


Ingredients

  • 65 g sweet potato
  • 35 g lasagne sheets
  • 50 g asparagus
  • 1/2 zucchini
  • 1/2 spring onion
  • 1/4 cup baby spinach
  • 1/3 cup frozen peas
  • 60 g reduced-fat ricotta
  • 3 egg whites
  • 1/2 tomato
  • 3 g fresh basil
  • 30 g reduced-fat mozzarella


Method

  1. Preheat oven to 180 degrees celsius.
  2. Steam the sweet potato until almost soft. Mash or thinly slice and set aside.
  3. Trim and quarter asparagus, create zucchini ribbons with a slice or a mandolin, trim and chop onions.
  4. Bring a medium saucepan of salted water to the boil. Add asparagus, zucchini and onion. Boil for approximately 2 mins. Remove with slotted spoon. Drain on paper towel. Add spinach to pan. Cook for 1 min or until wilted. Remove with slotted spoon. Squeeze out excess moisture when cool enough to handle. Roughly chop.
  5. Cover the base of a small ovenproof dish or large ramekin with baking paper. Layer a quarter of the lasagne sheets trimming to fit. Layer asparagus mixture, peas, a third of the egg whites and a third of the ricotta. Top with a third of the remaining lasagne sheets, half of the sweet potato, half of the spinach, half of the remaining egg whites and half of the remaining ricotta. Repeat. Top with remaining lasagne sheets. Arrange tomato and basil leaves on top. Sprinkle with mozzarella cheese.
  6. Bake for 30 minutes or until golden. Serve and enjoy.
